Best Pancakes Ever | Recipe

Pancakes are one of my favourite things to make (when I have the time). The recipe I use is actually meant for waffles, but it makes just as amazing pancakes. The original recipe is from Sorted Food can can be found here. I normally only make about half of the recipe though and it makes about 6 medium sized pancakes.

You will need:
110g flour
1/2 tsp salt
35g caster sugar
1 tsp baking powder
2 eggs
170ml milk
1/2 tsp vanilla extract
a knob of butter
and any toppings you like

  1. Mix together the flour, salt, sugar and baking powder in a bowl.
  2. Separate the eggs and set aside the white in a clean bowl.
  3. Combine the egg yolks, milk and vanilla extract.
  4. Whisk the wet ingredients into the dry.
  5. Whisk the egg white to medium peaks and gently fold through the batter. (An electric whisk will make this a lot easier)
  6. Heat a pan to a medium high temperature and pop in the butter.
  7. Spoon in the batter to the desired size. Fry until the pancake just begins to cook around the edges and bubbles start the form. This usually takes about 2 minutes.
  8. Flip the pancakes over and cook for another 2-3 minutes, until both sides are golden. 
  9. Serve up with any desires toppings (I love using Nutella or Golden Syrup).
